hi.
my parents are coming to visit me in london from Canada in April. I want to take them away for a few days to ireland. Where should we go? They aren't big drinkers.

Depends, do they like ancient archeologic sites? There are plenty in Ireland - just north of Dublin is Newgrange which is my all time favorite. After your parents were in London, Dublin will seem small I bet, so that wouldn't be a problem. Or if they want to go all country side, the west coast of Ireland with Galway (south of it Cliffs of Moer/Co. Clare or north of it Co. Connemara) are always wonderful.

If you're landing in Dublin, at the tourist office near Trinity College, they offer many day trips. They might like heading South to visit Wicklow- visit Glendalough where St. Kevin built a monastery in the 6th century. They might also like a day trip to Kildare where there's the Irish National Stud and Japanese Gardens.
